Recipe notes

Liquid smoke

I was alarmed when I saw that Sarah includes liquid smoke in this recipe. I avoid chared and smoked food because it contains cancer causing chemicals but I did wonder what liquid smoke actually contains.

I discovered that it’s made from the smoke of burning woodchips that is condensed causing the vapours to liquefy. It then is put through a series of filters which results in a clean,  natural smoke-flavored liquid.

This does not however mean that it’s safe. Studies have shown that the amount of carcinogenic chemical found in liquid smoke depends on the type of hardwood used and the temperature at which it is burned.

So, if you only have it once in a while it may not be harmful. If you are in the habit of eating a lot of charred or burnt food as well as a lot of smoked food then that is a bit risky.

If you are going to use liquid smoke then do be sure to check the label as some liquid smoke products have molasses, vinegar, and other flavorings added to them.
