If you’re on a low carb diet, one of the foods that you need to avoid is pasta. Pasta contains a good amount of carbohydrates that could significantly ruin your diet. The good news is that there are plenty of low carb alternatives to pasta and one of these is zucchini noodles.

Zucchini Noodles

Zucchini (courgette) is a great alternative to pasta simply because it perfectly converts into noodles easily and is low carb. To compare, a cup of regular cooked pasta contains 40 grams of carbs while a cup of zucchini noodles contains only 7 grams of carbs!

The best way to make noodles out of zucchini is with the use of a spiral vegetable slicer or spiralizer. If you have no spiralizer, you can get a free one here or use any vegetable peeler, similar to the peeler you use in peeling potatoes or carrots. Yet, investing on the spiralizer is really worth it because it saves you a lot of time. If you have the gadget, all you need to do is to feed in the zucchini and it will immediately produce the noodles!

Low Carb Zucchini Pasta With Avocado Sauce Recipe

There are lots of delicious recipes that you can make out of the zucchini noodles but if you want something light with fewer calories and carbs, zucchini pasta with avocado sauce is right for you. Recipe is based on one from gimmedelicious.com with a few alterations.

Ingredients
Serves 4

3-4 large or 5-6 small zucchini (courgettes)
1 teaspoon avocado oil ( better to use for cooking than olive oil)
3 cloves garlic crushed or minced

Avocado sauce

2 ripe avocados pitted, and peeled
Large handful of cilantro (coriander) about ⅓ cup loosely packed
2 tablespoon lemon juice
2 tablespoons extra virgin olive oil
½ teaspoon Himalayan salt or to taste (most sea salt now contains plastic fibers)
¼ teaspoon freshly ground black pepper
Filtered water as needed

Optional for garnish

Grated parmesan
Extra chopped cilantro, parsley or basil

Directions

Slice the ends of your zucchini off.
Make noodles from them with your spiralizer.
Heat avocado oil in a large pan over medium heat.
Add crushed garlic and cook gently until soft and just beginning to turn golden.
Add the zucchini noodles, toss to combine with the garlic and cook for a few seconds. then
Remove pan from heat and set aside to cool.

Meanwhile place avocado cilantro, lemon juice, olive oil, salt, and pepper in your blender.
Blend until mixture is creamy adding 2-3 tablespoons filtered water if necessary
until mixture reaches a pourable consistency.

Pour sauce on zucchini noodles. Toss and serve.
Top with with grated parmesan and/or additional chopped cilantro.
Enjoy warm or at room temp!
