You can choose to make a big batch of these delicious muffins over the weekend or perhaps during your free time. Store them in the fridge or freezer ( so you can simply grab one during those busy mornings when you have to hurry for work.
Grab & Go Low Carb Muffins Recipe
Ingredients
• 3 1/2 cup almond flour or any regular ground almonds (350 grams)
• 1 cup & 2 tbsp. plain full-fat yogurt (300 grams)
• 6 medium-sized eggs
• 4 tbsp. melted butter
• 2 tsp. baking powder
• 2 tsp. vanilla extract
• 2 tbsp. granulated sweetener (like Erythritol) or more, if you like a sweeter muffin
• 100-gram blueberries or raspberries (1/2 cup)
