If you’re looking for a healthy, low carb recipe that your entire family will love, try these vegetable fritters with halloumi. Even those who usually hate vegetables will surely love these since they are nicely seasoned with chili, salt, and pepper.
And, instead of regular wheat flour, the recipe uses coconut flour to ensure they are low in carbs. In addition, they contain halloumi, a type of cheese made from a combination of goat and sheep’s milk and can help make the veggies more flavorful.
What Vegetables to Use for Low Carb Vegetable Fritters?
As you can see below, these vegetable fritters from Keto Fitness Club with halloumi consist of cabbage, shallots, carrots, and zucchini (courgette). But you can always experiment with other vegetables if you want. However, make sure they are low in carbs.
You can also try a combination of just carrots and zucchini. While carrots are not as low in carbs as leafy green veggies such as lettuce, cabbage, spinach or kale, they are also not as high in carbohydrates as other root veggies.
If you want to use carrots, use them sparingly. For instance, this vegetable fritters recipe contains only 50 grams of grated carrots. But if you want them to be extremely low in carbs because you’re on the keto diet, you can replace carrots with bell peppers or other low carb veggies.
How To Make the Fritters Healthier?
If you want to save some calories and make these vegetable fritters healthier, you can bake them instead of frying them. When baking, divide them between eight small dishes lined with grease-proof paper. Press the mixture down and bake at 375°F/190°C for 10-15 minutes, flipping them over when needed.
Another thing you can do is use organic produce where possible. The vegetables will contain more nutrients and will be free of pesticide residue.

Vegetable Fritters with Halloumi Recipe
Makes 4 portions
- 140 grams thinly sliced organic cabbage (you can replace this with broccoli stalks or cauliflower)
- 50 grams grated organic carrots (you can replace with bell peppers)
- 60 grams grated organic zucchini (courgettes)
- 40 grams finely sliced shallots
- 3 large organic/pastured eggs
- 15 grams organic coconut flour
- 225 grams halloumi cheese (one block)
- ½- 1 tsp Kashmiri chili (you can also use a combination of paprika and a small amount of cayenne)
- Finely chopped herbs of your choice
- Redmond Real Sea Salt & pepper
- 20g Cooking organic coconut oil (if frying)
Directions

- Start by slicing the cabbage and shallots and grating the carrots and courgettes. Alternatively, roughly chop the veggies and process them in a food processor. When done, put them in a large mixing bowl and set aside.
- Next, grate the halloumi using a hand grater until it becomes a rice-like texture. You can also blitz it in a food processor. Add the processed halloumi into the bowl together with the other veggies.
- Add the remaining ingredients to the bowl, except the coconut oil. Combine well and add in salt & pepper to taste.
- Heat a teaspoon of coconut oil in a non-toxic, non-stick frying pan on low medium heat. Wet your hands and gently mold the vegetable fritters into shape. Flatten a little if necessary using a spatula. Repeat until the pan is full then fry.
- Leave the vegetable fritters to fry gently for 3 to 5 min on one side before flipping them over. Cook for another 3 minutes or so. Serve with a sauce if you like and a salad.
