If you’re looking for a tasty appetizer to include in your low carb diet, you will undoubtedly  love these cauliflower fritters, especially if you’re also vegan. As you probably know, cauliflower is a great veg to add to your low carb or keto diet.

These cauliflower fritters from Heavenly Fan have been made even more delicious by the creamy vegan tartar sauce. You can eat them as snacks, appetizers, or a side dish.

Cauliflower has become a staple for low carb diets as it is has become a replacement for high carb rice. Some innovative restaurants are adding it to their menus as cauliflower “steaks” or even serving a spiced whole head as a delicious roast.

Health Benefits of Cauliflower

Cauliflower is a very healthy veg. One cup of cauliflower florets contains only 5.3 grams of net carbs. It’s an excellent source of vitamins C and K and fiber which is needed to help prevent low carb constipation.  It also contains the essential minerals calcium, magnesium and potassium.

Cauliflower is a cruciferous vegetable like broccoli, cabbage and Brussel sprouts and is good for your liver. These vegetables contain flavavoids and carbinols which increase the activity of the Phase II liver detox system.

They are also antioxidants and help to reduce the risk of cancer. Carbinol has some anti-inflammatory properties too.

Cauliflower and other cruciferous vegetables contain the compound indole-3-carbinol a plant oestrogen. It can help to regulate oestrogen levels and balance hormones.

Cauliflower Fritters

Ingredients

Makes 10 fritters

Fritters

  • 1 medium-sized organic cauliflower (2 cups finely cooked and chopped cauliflower)
  • 2 tbsp psyllium husk powder
  • 1 cup ground almonds
  • 1 – 2 garlic cloves, finely chopped
  • 2 – 3 spears of spring onions, chopped coarsely
  • Redmond Real Sea Salt
  • Freshly ground pepper

Vegan Tartar Sauce

  • 1 chopped avocado
  • 3 – 4 tbsps. coconut milk yogurt
  • 5 – 6 chopped gherkins
  • Redmond Real Sea Salt
  • 1 tsp vinegar
  • chives to garnish

Directions

Fritters

1. Poach the cauliflower until tender, then chop finely together with the garlic.
2. Mix all ingredients together and add salt and pepper.
3. Divide the mixture into ten portions and shape them into round, individual patties.
4. On low/medium heat, fry the patties using a generous amount of coconut oil until they develop golden brown color on both sides.
5. Leave them to rest before serving.

Vegan Tartar Sauce

Mix all the ingredients for the tartar sauce together and garnish with the chopped onion chives.
