These keto butter cookies are the perfect pair for your favorite coffee. It’s a low carb version of the famous butter cookies that are thought to have originated in Denmark.

Traditionally, the cookies are made with three main ingredients – white flour, refined sugar, and butter. Obviously no good if you are following a keto diet. But these keto butter cookies from Nicole of Family and Glamour are made with almond flour.

Also, the cookies don’t have any sugar in them. Instead, they are sweetened with Erythritol golden.

To make the cookies even more delicious, they are glazed with Dark Chocolate and chopped almonds. Each cookie contains only 0.9 grams of net carbs, perfect for your ketogenic diet.

They are quick and easy to make and can be enjoyed by anyone. They are so easy that even kids can have fun making them.

Almond Flour

Almond flour is ideal for the keto and low carb diets because, compared with wheat flour, it’s higher in fat and lower in carbs and is low on the glycemic index scale. This makes it good for weight loss.

It’s also lower in phytic acid, an anti-nutrient, which is present in grain flours. Phytic acid can prevent you absorbing nutrients from food.

Keto Butter Cookies

Makes 10 cookies approx.

Ingredients

  • 1 cup blanched Almond Flour
  • ¼ cup organic grass-fed butter, softened
  • ½ tsp vanilla bean powder or extract
  • ¼ cup Erythritol golden
  • ¼ tsp gluten free baking powder (optional)

Chocolate Glaze with Chopped Almonds

Directions

1. Add the butter and erythritol to a mixing bowl. Whip the ingredients together until they develop a creamy consistency and become pale in color. Scrape the sides of the bowl with a spatula from time to time to make sure it gets well mixed.

2. Sieve the almond flour, vanilla powder and baking powder, if using, into the bowl with the whipped butter and erythritol. Push any larger pieces through the sieve with the back of a large spoon.

3. Combine the butter mixture and dry ingredients until they form a dough. This should only take 1 or 2 minutes. Form into a ball and wrap it with greaseproof paper and then non-PVC cling film. Refrigerate for at least 30 minutes.

4. Preheat the oven to 350°F/175°C while the dough is chilling. Line a baking tray with a silicone baking mat or non-bleached parchment paper.

5. Once chilled, portion out the dough using a cookie press or scooper and place the cookies on the baking tray. Bake the keto butter cookies for about 10 minutes until the edges start to develop a light golden brown color.

6. Remove the cookies from the oven and leave to cool. The cookies will be soft when they first come out of the oven but as they cool they will become firm.

7. Now, it’s time to prepare the chocolate glaze. Get a microwave-safe bowl and heat the sugar-free dark chocolate for 45 seconds to melt. Alternatively melt in a glass bowl of a pan of simmering water. Stir with a spatula to ensure that it is melted evenly.

8. Carefully dip the top portion of the keto butter cookies into the melted chocolate. Place the cookies back onto the baking tray, then sprinkle with chopped almonds. Leave the chocolate to cool and harden before serving the keto butter cookies.
